I wanted to share this easy and delicious recipe with you all, inspired by my awesome client and great friend, Phil.  Phil gave me a recommendation to grab these yummy, pre-made stuffed bell peppers at Trader Joe’s. They were easy to bake and bursting with flavor of all kinds of Fall’s savory goodness.

I decided to replicate the stuffed bell peppers to create a much cleaner and healthier approach than the store-bought peppers.

Here is the link to the Skinny Taste’s version of the stuffed bell pepper. The only change that I made to the recipe was that I eliminated the cheese, no need for the extra fat.
